How to choose the right Gastronorm Pans

  • Decide on the GN size (1/1, 1/2, 1/3, 1/4, 1/6, 1/9 etc.) based on your existing ovens, bain maries, counters and storage systems.
  • Select the depth carefully to match portion volumes and holding requirements, from shallow 20mm pans to deep 150mm containers.
  • Choose between standard and heavy duty stainless steel depending on how frequently the pans will be used and transported.
  • Consider perforated versus solid pans for different applications such as steaming, draining, chilling or saucing foods.
  • Plan your layout for service style, whether you are running a self-service buffet, canteen line or back-of-house prep area.
  • Check compatibility with lids, racking and trolleys to ensure a smooth workflow across storage, cooking and service.

Care and maintenance

  • Wash gastronorm pans promptly after use, following manufacturer guidance and using non-abrasive detergents to protect the stainless steel finish.
  • Avoid metal scouring pads and harsh chemicals that can scratch surfaces or damage the protective layer on stainless steel.
  • Allow pans to dry fully before stacking to prevent trapped moisture, staining and potential corrosion over time.
  • Inspect pans and lids regularly for dents, warping or sharp edges, replacing damaged items to maintain food safety and presentation.
