Infrico AMC8714XL is an upright Dry Aging meat maturation cabinet from the AMC Series, designed for Cavas & Dry Aging applications where consistent results matter. Built for professional kitchens in Ireland, it supports the dry maturation process by maintaining controlled temperature and humidity—helping you develop deeper flavour while the meat naturally loses around 10% to 20% of its liquids over 5–8 weeks.
This Dry Aging meat cabinet -AMC runs at +2°C to +6°C with adjustable humidity from 45% to 80%, backed by a ventilated refrigeration system for even conditions throughout the cabinet. With a tall footprint of W 850 x D 650 x H 2300 mm, it’s suited to busy restaurant and hotel operations looking to mature meat in a dedicated, purpose-built unit.
