Infrico AMC6714L is an upright dry aging meat maturation cabinet from the AMC Series, built for Cavas & Dry Aging applications where consistent results matter. Designed for professional kitchens, steakhouses and hotel restaurants in Ireland, it supports dry maturation by maintaining controlled temperature and humidity to help develop deeper flavour and a distinctive finish over time.
This Dry Aging meat cabinet -AMC runs at +2°C to +6°C with humidity control from 45% to 80%, using a ventilated refrigeration system for even conditions throughout the chamber. During the 5–8 week maturation process, meat can lose around 10%–20% of its liquids, helping intensify taste and texture.
