This daily cleaning and maintenance procedure applies specifically to Merrychef eikon e4 high-speed combination commercial ovens.
Before you start
- The Merrychef eikon e4 must be cooled down completely before any daily cleaning processes are carried out.
- Commercial kitchen operators must assemble required PPE including protective rubber gloves, heat proof gloves, eye protection, and an optional dust mask prior to cleaning.
- Ensure you have Merrychef approved oven cleaner, Merrychef approved oven protector, a non-abrasive nylon scrub pad, and clean cloths or paper towels ready for the task.
- Confirm that no tools or sharp implements are used during the dismantling or cleaning of the oven interior.
Safety warnings
- Do not use caustic cleaners on any part of the oven or cavity because caustic chemicals permanently damage the catalytic converters.
- Never use tools, sharp implements, metallic scourers, or harsh abrasives on any component or surface of the appliance.
- Do not spray cleaning chemicals directly into the fan opening located at the rear interior of the cavity.
- Do not scrub or apply oven chemical products to the door seal.
- Do not operate the oven at any time without a clean air filter properly installed.
Cooling the Oven Down Before Cleaning
Carrying out daily cleaning routines on a hot appliance creates significant burn risks and will compromise chemical effectiveness.
The automated cool-down procedure disables the heating system and monitors internal cavity temperatures until safe handling levels are achieved.
Operators can significantly accelerate the cooling cycle by introducing a container filled with ice or cold water directly onto the cavity base.
- In Full Serve mode, select the CLEANING symbol directly from the main menu screen.
- In Full Serve or Quick Serve mode, select the blue thermometer symbol on the touchscreen to disable heating elements and start the cooling cycle.
- Taking all necessary precautions, place a suitable container of ice or cold water into the hot cavity to speed up the cooling process.
- Select the OK symbol on the display to proceed with the cooling routine.
- Allow the cooling progress cycle to complete, which takes approximately 30 minutes.
- Using heat proof gloves or an oven cloth, carefully remove the container of water or melted ice once the cavity is cool.
Removing and Cleaning Removable Components
The internal impinger plates, rack, grease filter assembly, and base air filter must be removed systematically without using mechanical tools.
All dismantled components must be thoroughly washed in a dedicated sink and dried completely before being refitted into the appliance.
- Switch off the oven completely before starting component removal.
- Remove the air filter located at the base of the oven chassis.
- Open the oven door and lift out the grease filter assembly located at the rear of the cavity.
- Remove the upper impinger plate by undoing the two thumb nuts located at the top of the cavity by hand.
- Remove the lower impinger plate and the wire rack from the interior cavity floor.
- Wash all removed components in warm soapy water at the sink.
- Rinse the washed components thoroughly using a clean cloth and plenty of clean, warm water.
- Dry all washed components completely using a fresh, clean cloth before refitting.
Cleaning the Cavity and Exterior Surfaces
Cavity hygiene requires removing loose food debris before applying Merrychef approved oven chemical cleaner.
Operators must wear protective rubber gloves and eye protection throughout the chemical application process.
Care must be taken to protect sensitive areas including the rear fan opening and the door seal from direct chemical contact or abrasion.
- Remove any loose spillages from the cavity floor using a suitable cloth or paper towel.
- Use a dry clean brush to remove food particles lodged between the cavity floor and the inside of the front door.
- Put on protective rubber gloves and eye protection in accordance with safety instructions.
- Carefully spray Merrychef approved oven cleaner onto all internal cavity surfaces except for the door seal.
- Ensure you do not spray oven cleaner directly into the fan opening located at the rear interior of the cavity.
- For difficult burnt-on deposits, leave the cleaner to soak for 10 minutes with the oven door open.
- Use a non-abrasive nylon scrub pad or sponge to clean the internal cavity walls, cavity roof, and inner door face without scrubbing the door seal.
- Wash off chemical residues using a clean cloth and plenty of clean, warm water.
- Dry the internal surfaces thoroughly using a fresh clean cloth or paper towel.
- Reinstall the cleaned, completely dry internal components into the cavity in reverse order.
- Close the oven door and wipe down the exterior casing of the oven with a damp cloth.
- Press the green check mark on the touchscreen display.
Applying and Curing Merrychef Oven Protector
Merrychef approved oven protector creates a protective barrier on stainless steel surfaces to simplify subsequent daily cleaning routines.
Protector must only ever be applied to an oven that has been thoroughly cleaned and dried.
The protector chemical requires high-temperature curing before the appliance is ready for standard cooking duties.
- Spray Merrychef approved oven protector directly onto a clean sponge rather than spraying the cavity interior.
- Spread the protector lightly across all internal cavity surfaces while strictly avoiding the door seal, cooking surfaces, fan inlets, and fan outlets.
- Close the oven door and switch on the oven at the power control.
- If the touchscreen displays a warning indicating that the air filter has not been replaced, install the clean air filter at the base and press the green check mark.
- Preheat the oven to its standard operating temperature.
- Allow the oven to operate for approximately 30 minutes at operating temperature so the oven protector cures, turning a light brown colour when finished.
Stop and get help if
- Stop the procedure immediately if caustic chemicals are provided, as caustic cleaners destroy catalytic converters permanently.
- Stop operation if the base air filter is missing or damaged, as running without a clean air filter is prohibited.
