Lincat CiBO Recipe Stages Explained: When to Use Oven, Base and Grill Heat

Most Lincat CiBO cooking programmes stage an initial oven and base heating cycle followed by a finishing grill cycle.

Applies to

This guide applies directly to the Lincat CiBO high-speed cooking oven.

Before you start

  • Check the default idle pre-heat temperature in system settings and increase it above 180°C if your regular recipes operate higher.
  • Raising the idle temperature prevents extended pre-heating delays before a recipe programme can start.

Safety warnings

  • Manufacturer cooking timings serve as starting guidelines and do not replace standard kitchen food-safety temperature validation.

Heat Source Selection and Staging Rules

For most recipes, the first stage should use both the oven and base elements to heat the cavity fully.

Most programmes then follow this initial heating cycle with a subsequent grill cycle.

The controller prevents selecting grill, base, and convection simultaneously to avoid exceeding the inlet electrical supply.

  1. Enter time and temperature values when programming the convection oven heat source.
  2. Enter only duration settings when configuring the base or grill heat sources.

Loading and Product Setup

Cook paninis and sandwiches open to ensure the fastest cooking results.

Position baked goods on a baking tray placed directly on the wire rack for optimal baking results.

Use the supplied USB key to update controller software and transfer programmed recipes between machines.
