How to Operate and Run-In the Italforni EGA-2 Gas Pizza Oven

To operate the Italforni EGA-2 pizza oven, you must first complete a specific running-in process to prepare the cooking chamber.

The oven is intended exclusively for professional use.
The equipment must only be operated by trained staff.
You must thoroughly clean the oven to remove the grease film before switching it on for the first time.

Never obstruct the burner airflow or the general room ventilation.
Do not obstruct or leave anything on the combusted gas outlet or on the oven flue.

You must complete a mandatory running-in procedure before using the oven for regular food service.

Set the thermometer to 100 °C to begin the initial running-in process.
Turn the oven on and keep it at 100 °C for exactly 30 minutes.
Allow the oven to cool down completely after this first 30-minute running-in phase.
Set the thermometer to 200 °C for the second phase of the running-in process.
Turn the oven on again for the second running-in phase.
Keep the oven at 200 °C for another 30 minutes during this second phase.
Allow the oven to cool down again after the second 30-minute running-in phase.
The oven is ready for use after completing these running-in cooling phases.

Daily operation requires a specific sequence to ensure the burner ignites safely.

You must ensure that there are no obstructions to the burner airflow or room ventilation before starting the equipment.

You must never leave anything on the combusted gas outlet or on the oven flue.

Set the gas shut-off cock located upstream of the oven to the open position.
Connect the oven to the electrical power supply.
Engage the main switch F to turn on the oven.
Turn the red thermometer indicator H to the required temperature between 0 and 400 °C.
When cold-starting the oven, leave the doors open for the first 2 minutes to stabilise the burner flames.
Press switch E to turn on the cooking chamber light if necessary.

The oven features automatic safety mechanisms that cut off the gas supply if the burner fails.

If the burner is accidentally turned off or fails to start, the gas supply is cut off and the red warning light G comes on.

The oven is equipped with a safety thermostat which cuts in when the temperature exceeds 430 °C.

This safety thermostat cuts off the flow of gas to the burner if the temperature exceeds 430 °C.

If the safety thermostat trips, it can only be reset manually.

This manual reset procedure must be performed exclusively by a specialised technician.

Observe the temperature to ensure it does not exceed 430 °C, which will trigger the safety thermostat.

You must follow a specific reset procedure if the burner shuts down during operation.

The red warning light G indicates that the gas supply has been cut off due to a burner failure.

Press the red reset button I if the burner shuts down.
Observe that the red warning light G will turn on in the meantime.
Press the reset button again after a few minutes if the red warning light does not go out.
Contact the technical service centre if the burner still does not ignite after this second attempt.

You must follow the correct shutdown sequence to safely secure the oven after service.

Stop attempting to start the oven if the burner still does not ignite after retrying the reset button.

Contact the technical service centre if the burner still does not ignite after you have pressed the reset button a second time.
Escalate to a specialised technician to manually reset the safety thermostat if it trips.
