After mixing is completed, trained operators must rotate the hand wheel to lower the bowl to the down position, which provides the necessary clearance to remove the bowl or change agitators.

This guidance applies directly to the Chefsrange GCAD10 countertop planetary mixer, also supplied under the model reference AD10.

Before you start

  • Ensure that the mixer is completely stopped before attempting any speed changes or after-use maintenance operations.
  • Verify that mixing has finished before rotating the hand wheel to adjust the bowl height.
  • Ensure that the bowl is in the down position before attempting to mount or dismount any agitator.

Safety warnings

  • The operator must stop the machine before changing speeds to prevent transmission damage.
  • Staff must never mix dough at middle or high speed.
  • When installing an agitator, ensure the driving pin in the shaft is fully engaged in the L-shaped slot to prevent the agitator falling down during running.

Lowering the Bowl and Removing the Agitator

After mixing is completed, the operator must rotate the hand wheel to lower the mixer bowl.

Lowering the bowl assembly is necessary in order to remove the bowl or change agitators.

Rotating the hand wheel until the cradle reaches the lowered position provides clearance to detach the agitator from the shaft.

The machine must be stopped before operators undertake any speed changes or agitator adjustments.

  1. Ensure the mixer is stopped completely following the end of the mixing cycle.
  2. Rotate the hand wheel to lower the bowl assembly into the down position.
  3. Disengage and remove the agitator from the mixer shaft once the bowl is fully lowered.
  4. Remove the mixing bowl from the lowered cradle support.

Agitator Shank and Drive Pin Engagement

When assembling an agitator onto the shaft, the bowl must always be kept in the down position.

The operator must slide the agitator upward on the drive shaft while the bowl remains lowered.

Turn the agitator until the driving pin in the shaft reaches the L-shaped slot located in the agitator shank.

Securing the shaft driving pin into the L-shaped slot avoids the agitator falling down while the machine is running.

  1. Verify that the mixer bowl is resting in the down position.
  2. Slide the agitator upward onto the mixer drive shaft.
  3. Turn the agitator until the drive pin on the shaft engages fully into the L-shaped slot on the shank.
  4. Verify mechanical engagement to ensure the attachment cannot detach during running.

Routine Bowl Slideway Maintenance

Routine maintenance requires staff to lubricate the bowl slideways occasionally.

The slideways must be lubricated by applying a small amount of oil or grease.

Staff should apply the oil or grease to the bowl slideways using the tip of a finger.

Rotating the hand wheel to lower and raise the bowl helps distribute the lubricant along the slide ways.

  1. Inspect the bowl slide ways occasionally during routine post-use cleaning.
  2. Place a small amount of oil or grease on the tip of your finger.
  3. Apply the oil or grease directly onto the bowl slide ways.
  4. Rotate the hand wheel to move the bowl assembly and distribute the lubricant.

Operational Speed Constraints

The machine must be completely stopped before changing between mixer speeds.

Operators must never mix dough at middle speed.

Operators must never mix dough at high speed.

  1. Stop the machine before shifting the speed selector to a new setting.
  2. Do not operate the mixer at middle speed when preparing dough batches.
  3. Do not operate the mixer at high speed when preparing dough batches.

Stop and get help if

  • Stop the machine immediately prior to operating the speed change mechanism.
  • Stop operation if dough has been loaded and the speed selector is set to middle or high speed.
